Breanna's Turn

So we got all of Christian's projects done just to find out Friday that Breanna had a project due on Monday. Her board on China looked great. I think the chop sticks really set off everything. She then had to cook this great Cashew Chicken. We only got to taste a small piece of chicken as she had to have enough for the whole class to sample. We just sat and stared at the beautiful food waiting for the rice to finish cooking. It was so hard to resist not eating it. The recipe was so good that I wrote it in my cook book so we can have it for supper someday.

Breanna's Recipe:

Cashew Chicken

1lb boneless chicken, cut into pieces
3/4 c orange juice
1/3 c honey
1/4 c soy sauce
1 tbsp cornstarch
1 tsp ground ginger
1 tsp garlic salt
1/2 tsp pepper
2 tbsp veg oil
4 green onions cut up
3 large carrots, cleaned sliced
2 celery stalks
1 c cashews

1.) For sauce combine juice, soy sauce, honey, cornstarch & seasonings.
2.) Heat 1 tbsp oil until it begins to smoke. Stir fry vegetables for several minutes. Remove from wok.
3.) Heat another tbsp of oil until smoking and stir fry chicken until browned and tender.
4.) Add cooked vegetables, cashews, and sauce mix. Continue cooking until sauce bubbles and thickens.
Serve over rice. Makes 6 servings.

Hopefully this is the last project this nine weeks. I never knew public school could be so expensive.
